A thermocouple is a safety mechanism that restricts unburnt gas from flooding the appliance when the pilot light is out. One end if fitted within or just above the pilot flame, the other is attached to a volt sensor that operates the gas valve. When the pilot end encounters a flame a small current flows to the valve, notifying it to remain open. When no signal is sent, the valve remains closed.
