A thermocouple is a safety instrument that restricts unburnt gas from flooding the appliance when the pilot light is out. One end if fitted within or just above the pilot flame, the other is attached to a volt sensor that governs the gas valve. When the pilot end detects a flame a small current flows to the valve, instructing it to remain open. When there is no signal, the valve remains closed.
