The gas valve regulates the flow of gas inside the appliance. It operates in the same way as a tap but takes its instructions from the printed circuit board. When there is no need for gas the gas valve closes, restricting the supply of gas. When gas is needed the PCB sends a signal that instructs the gas valve to release the gas.
